The Tsukiji Sushi Workshop is lead by veterans of the Tsukiji Fish Market, Mr Morita who has been worked in Tsukiji for more than 10 years and sushi masters who have been pursued Japanese cuisine for many years in the center of cuisine culture of Tokyo, such as Asakusa, Ginza and Tsukiji.

The half-day workshop we at the Tsukiji Sushi Workshop are offering is aimed at people wanting to know not only how to prepare sushi, but everything from learning about the procurement of ingredients to presentation.

What’s more, since our workshop is located at the heart of the Tsukiji Fish Market you’ll have the chance to immerse yourself in the history and culture of the world’s largest fish market.

Sushi Master Profiles

Hirobumi Morita
Morita-san spent 3 years in Milan gaining experience with Mediterranean seafood. In order to deepen his understanding of seafood cuisine, in 2004 he started working in Tsukiji and has been hard at work since.
“You have to be quick here in Tsukiji. Since freshness is so important, everyone in Tsukiji gets up in the early hours before dawn and shops will start to close soon after lunch. And of course, this need for speed is one of the reasons behind the origins of sushi. We hope to share our passion for Sushi and Japanese cuisine with you!”
Nobuyuki Noji
At the age of 23, Noji-san started his career as a chef at the century-old Ryotei, a famous establishment of fine Japanese dining. Not satisfied, when 33 he moved to Tsukiji to rediscover the roots of Japanese cuisine. And now, he is the owner of his own restaurant.
“Tsukiji is a town of change. Adapting to both season and age, it is constantly striving to provide the perfect ingredients for cuisine. For chefs like me, it really is a treasure trove – if I come here I can get hold of ingredients I can’t get my hands on anywhere else. I look forward to sharing my experience of Tsukiji with you!”
